Sugary Butter Cookies

These are my mother’s favorite cookies, based on an old Chicago recipe. It’s special because my mother was not known for doing the cooking in my family, even though she loved to. My father was the chef in the family, and he often beat my mom home from work to start dinner. When she was able to get to the kitchen first, she made my favorite dishes: her delicious, smothered pork chops and these butter cookies.

  • Oven
  • 2/3 cup sugar
  • 1 cup butter, softened
  • 2 cups all-purpose flour
  • 2 tsp vanilla extract
  • 1 pinch salt
  • 4 tsp sugar, for sprinkling
  1. Preheat oven to 350°

    Cream butter and sugar until fluffy. Can mix by hand.

    Mix in vanilla extract.

    Mix in flour gradually. (Use most of flour, but make sure dough is not too stiff. You might have just a little flour left over. )

    Using a small cookie scoop, Roll dough into balls and slightly flatten on a on greased cookie sheet.

    Flatten cookies with the bottom of a glass dipped in sugar if desired.

    Bake until golden brown (Approximately 12 – 15 minutes).

    Makes about two dozen.
